Attract customers by formulating juicy meat products with Fiberest Resistant Dextrin!




Consumers seek convenient, healthy, and tasty meat products.

Recently, there has been an increase in consumers looking for meat products for convenient home-cooked meals. In line with this trend, various meat products that can be easily heated and cooked in the microwave have been released. Additionally, due to growing concerns about health, environment, and animal welfare, the release of plant-based meat alternatives has become more predominant, contributing the market share of increased meat product market.


However, even consumers who want to consume healthy meat products often hesitate to do so due to concerns about the taste and texture of the products. After monitoring trends of alternative meat products for the last 3 years, it is identified that characteristics such as soft, tender, and juicy texture have been readily prevalent. Therefore, achieving such textures is a key point for those developing meat product applications.

Fiberest Resistant Dextrin affects a decrease in cooking loss and an increase in tender and juicy texture. Fiberest prevents the movement of water molecules due to its excellent water-binding capacity. Since most meat products are consumed through heating, even under such heating conditions, moisture does not exclude out of the finished product, leading to a reduction in cooking loss. We compared the heating loss between a plant-based patty (control group) and Fiberest-treated groups (1%, 2%, and 3%). The addition of Fiberest resulted in a decrease in cooking loss. It was also observed that Fiberest enhances the ability to retain moisture in proteins and is correlated with the implementation of juiciness in meat products.




According to the TPA (Texture Profile Analysis) measurement results, comparing the hardness values between the control group and the group with 1% Fiberest addition, it can be observed that the hardness value of the Fiberest-added group decreases. The dietary fiber of Fiberest has achieved a soft patty texture with high moisture retention, leading to increased juiciness.
